HOT BREWING INSTRUCTIONS: Bring filtered or freshly drawn cold water to a rolling boil. Place 1 slightly heaping teaspoon of loose tea for each 7-9oz / 200-260ml of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 3-7 minutes according to taste (the longer the steeping time the stronger the tea)

THE HISTORY
The truth is, no one knows why Earl Charles Grey, Prime Minister of England 1830-1834 had a tea named after him. A few popular stories are floating around though. One tale says that the Earl saved a Chinese tea blender’s son from drowning, and to show his gratitude, the tea blender passed on his recipe for black tea with bergamot oil. The PM took the recipe back to England and, well, you know the rest. Another theory is that the blend was created accidentally when Chinese diplomats shipped black tea and bergamot oil together as a gift to England, resulting in the citrus flavour we know and love. Yet another recollection from the Grey family states that the tea was brewed by a Chinese man specifically for the prime minister to suit the water at the family home. The lady of the house presented the concoction to guests, and it proved to be so popular that she was asked if others could sell it. Whatever the truth may be, we’re grateful for the delicious cream earl grey tea we’re able to sell at Pyramid Tea Co.
